Scalloped Portobello Mushrooms probably isn’t the first thing you think of once you hear “scalloped,” right? I’ve done many versions of a keto potato, a “faux-tato,” from a Radish au Gratin to a Brussels Sprouts Cauliflower au Gratin. If you like stuffed mushrooms, you’ll love this surprisingly keto recipe.

Here in Pennsylvania (West Chester, western suburb of Philadelphia) we are under stay-at-home orders due to the COVID-19 pandemic. The quarantine occurred over Easter 2020 and traveling for family wasn’t an option; I had the opportunity to host my first Holiday at home and made a low-carb meal, without the real potato.

Ingredients
- 10 Large Portobello Mushroom Caps
stem removed, cap scraped - 1 cup Gruyère, shredded
- 1/3 cup Parmesan, shredded
- 1/2 cup Heavy Whipping Cream
- Seasonings
- 2 tablespoons Parsley
- 2 teaspoons Italian Seasoning
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 2 cloves Garlic, minced
(2 teaspoons minced garlic) - Salt + Pepper
Can’t find Gruyère? You can use Swiss.
Directions
- Preheat the oven to 400.
- In a medium bowl, toss together cheese and seasonings; set aside.
- Remove stems from portobello mushrooms, scrape bottom of cap, and cut into 1/2 inch slices.
- Grease baking dish and layer slices of portobello mushroom and cheese; pour and cover with cream.
- Bake for 30 minutes.
